Breakfast Wraps

Breakfast Wraps (adapted from Taste of Home cards, Betty Kleberger)

1 batch-------------------------------------------- 2 batches -----------------------------------------4 batches
6 eggs --------------------------------------------- 12 eggs ---------------------------------------------24 eggs
2 Tbls milk --------------------------------------- 4 Tbls milk ----------------------------------------8 Tbls milk
¼ tsp pepper ------------------------------------ ½ tsp pepper --------------------------------------1 tsp pepper
1 Tbls canola -------------------------------------- 2 Tbls canola oil ----------------------------------4 Tbls canola oil
1 cup shredded cheddar cheese --- -------------2 cups cheddar cheese ----------------------------4 cups cheddar cheese
¾ cup diced fully cooked ham ------------------ 1 ½ cup diced fully cooked ham --------------- 3 cups diced ham
4 flour tortillas (8 in) warmed ------------------- 8 flour tortillas --------------------------------- 16 flour tortillas

In small bowl, whisk egg, milk, pepper. In large skillet, heat oil. Add egg mixture. Cook and stir over medium heat until eggs are completely set. Stir in cheese and ham.
Spoon egg mixture down center of tortilla and roll up.
To freeze, wrap each in plastic wrap and freeze. To use, thaw in refrigerator overnight. Remove plastic wrap. Wrap tortilla in moist paper towel and microwave on high for 30-60 seconds or until heated through.
*Note: you can use Egg Beaters (plain or flavored) instead of shell eggs.
