How about breakfast? French Toast Sticks


French Toast Sticks (adapted from Taste of Home cards)

1 batch (yields 1 ½ doz) -------------------2 batches ------------------------------------ 4 batches

6 slices day old Texas Toast------------------- 12 slices Texas Toast -------------------------24 slices Texas Toast

4 eggs ---------------------------------------------8 eggs------------------------------------------ 16 eggs

1 cup milk----------------------------------------- 2 cups milk ----------------------------------- 4 cups milk

2 Tbls sugar ---------------------------------------4 Tbls sugar----------------------------------- 8 Tbls sugar

1 tsp vanilla extract -------------------------------2 tsp vanilla extract -------------------------- 4 tsp vanilla extract

¼- ½ tsp ground cinnamon --------------------- ½ - 1 tsp ground cinnamon----------------- 1-2 tsp grnd cinnamon

Optional:

Nutmeg to taste

1 cup (2 cups, 4 cups) crushed cornflakes.

Cut each piece of bread into thirds. Place in an ungreased 13x9 pan.

In large bowl, whisk eggs, milk, sugar, vanilla, cinnamon (nutmeg). Pour over bread. Soak for 2 minutes, turning once. Coat bread with cornflake crumbs if desired.

Place in greased baking sheet. Freeze until firm, about 45 mins. Transfer to airtight container or baggie.

To Use: place desired number of sticks on greased baking sheet. Bake at 425 for 8 minutes. Turn, bake 10-12 minutes longer or until golden brown. Sprinkle with confectioners sugar. Provide maple syrup and/or sugar icing (butter, milk, powdered sugar) for dipping/drizzling.
