Silver Dollar Oat Pancakes

Silver Dollar Oat Pancakes (taste of home cards, Margaret Wilson)

1 batch (20 silver dollar pancakes)------------------- 2 batches --------------------- 4 batches

½ cup self rising flour ----------------------------------1 cup SR flour --------------------2 cups SR flour

½ cup quick cooking oats -------------------------------1 cup oats ------------------------2 cups oats

1 ½ tsp sugar ---------------------------------------------3 tsp sugar -----------------------6 tsp sugar

¼ -½ tsp salt --------------------------------------------½ -1 tsp salt---------------------- 1 tsp-2 tsp salt

1 egg-------------------------------------------------------- 2 eggs -----------------------------4 eggs

¾ cup buttermilk ---------------------------------------- 1 ½ cup buttermilk ------------- 3 cups buttermilk

½ cup cinnamon applesauce ----------------------------1 cup applesauce -----------------2 cups applesauce

2 Tbls butter, melted------------------------------------- 4 Tbls butter --------------------- 8 Tbls butter

In large bowl, combine dry ingredients. In small bowl, beat egg, buttermilk, applesauce, and butter. Stir into the dry ingredients until just moistened.

Pour batter by 2 Tablespoonfulls onto hot griddle coated with cooking spray. Flip when bubbles form on top. Cook second side until golden brown. Serve with syrup.

Cool remaining pancakes. Arrange on single layer on baking sheet. Freeze. Transfer to freezer bag.

To Use: place on lightly greased baking sheet. Bake at 400 for 4-6 minutes or until heated through.

(Or microwave in 10 second increments until done ).
